Snails (cretan style)

In Crete the snails are called “chochli”.

Ingredients:
1kg snails, rosemary, 1 cup of Felea olive oil, ½ cup red wine vinegar and some salt.

Cook:
Soak the snails in water and wash them, after place them in a pot of boiling water and boil for 10 minutes.
Choose the ones with their heads sticking out, rinse them thorough and put back into boil, in clean water with some salt.
In a pan with Felea olive oil , put and fry the snails , facing down, after having them drained.
Add the red wine vinegar, the rosemary and a pinch of salt and leave for a few more minutes so the snails cook. Stir, when they get all the aromas of the stock they are ready to serve.
